Recipe Time

Made a good pasta dish last week. Here is the recipe I used:
1 lb. rigatoni
15 oz. tub of ricotta cheese
1 med onion
2 cloves garlic
4 roma tomatoes
2 tablespoons of butter
dash of oregano
salt and pepper
Cook the pasta according to the package directions (most tube or small shell pastas would work for this recipe), drain and reserve.
While the pasta is cooking dice the onions and start to saute, as they cook mince or crush the garlic and add. Dice the tomatoes. As the onions turn transparent (5 minutes or so), add the tomatoes and butter and let it cook on low heat until the butter melts. Season to taste.
Mix the cheese with the cooked onions/tomatoes in a very large bowl. Fold in the cooked pasta until blended thoroughly.
Serve and Enjoy!
